I decided to make a summer salad but craved something fried! Looking at the contents of my fridge, the first thing I saw was an avocado. 10 minutes later, I was in hot, crispy, gooey avocado heaven!

This is literally love at first bite for everyone, make sure you make plenty as they will vanish!

I served the avocado in a yummy summer salad (pictured above). This salad is a great side dish to my previous recipe for stuffed tomatoes and slow cooked potatoes, or great as an addition to a buffet table. Details of the salad can be found below under 'Serving Suggestions'

                                                         Coating the Avocado
              


Total Time -  15 minutes // Difficulty Level (1-5): 3 //Serves: optional - adapt as necessary


 Ingredients
- 1/2 Avocado per person
- 5-10 grams of breadcrumbs (a medium sized hand full) I used Tesco Gluten Free from the  
  'Free From' range.
- 1 tablespoon of coconut oil

Method
- Slice the avocados into large chunks
- Pour the breadcrumbs onto a plate and push one piece of Avocado at a time gently into 
  the breadcrumbs on all sides until nine of the flesh is showing and the. Reascrumbs have 
  evenly coated it
- Heat the oil in a frying pan on high
- Gently place the Avocado slices into the pan and brown them until golden

Serving Suggestions

- I like to serve fried avocado with a fresh salad, pictured I have served it with ribboned    
  cucumber, shredded apple, tomato and crispy fried red cabbage! But a simple tomato 
  and cucumber is also really great. Just make sure the dressing is top notch! I love 
  anything with chilli or lemongrass!
- This is also great for a small starter or snack with a dipping sauce, again I love dipping these into a spicy sauce like sweet chilli sauce, sriracha, thai style or mexican salsa. They all taste great with the avocado.
